    Inka Paahtimo roasts coffee orders twice a week. Orders made by Tuesday 8am are shipped on Wednesday and orders made by Friday 8am are shipped on Monday.     Ivan Solis comes from a family of Costa Rican farm workers. He has worked in the food and beverage industry his entire adult life and has made a name for himself as an innovative and adventurous specialty coffee processor in the Tarrazú region! Ivan became a certified Q Grader in 2009 and has been obsessed with flavour ever since. After working at two of Costa Rica’s largest mills, Ivan started his own wet mill, Santa Fe, in 2017, where he began experimenting with a new processing method called Candy Natural a few years ago.

    “Candy Natural” is the name Ivan coined for this anaerobic treatment. During the process, whole coffee cherries undergo a dry anaerobic fermentation for four days, after which they are transferred to raised beds to dry in the sun. Once the cherries from one batch are removed, Ivan and his workers take the remaining juice from the fermentation process and pour it into the next batch to start the fermentation process. This step, which is similar to the fermentation process in whisky production, helps to ensure that the flavour profiles are consistent across batches of fresh coffee cherries.
