We’ve been working with Luis Collazos’ coffees for several years now and each year the coffee has had minor changes to its characteristics. This yield is significantly less in your face than the previous years’ and we’ve really enjoyed developing the subtle, yet delightful notes.

This Castillo varietal has a pleasant acidity that’s accompanied by notes of lingonberry and green apple, perhaps a little pomegranate. It’s balanced out by a sweetness and notes of fudge.
