This coffee is grown by small families of the indigenous Yanesha people from Villa Rica in the Oxapampa region in the Peru jungle. It is the same area where I worked as a volunteer on coffee farms before starting at Inka Paahtimo. The coffee is grown without chemical pesticides or fertilizers on the slopes of the Andes, which has the optimal soil for great tasting coffee. This coffee was de-pulped by machine, fermented in water for 16 hours and floated with a siphon, twice, to separate out inferior beans. With 2 percent of the fruit left on the bean, it was dried on a cement patio over four days.
