Petrona Recinos is a first-generation coffee producer in Concepcion Huista in Huehuetenango region. She grows coffee on her land called Husa’, which is local indigenous language Popti, meaning “tail of the Cuchumatenes”. During the harvest Petrona makes sure the ripe cherries are picked and usually she needs to do three separate picking passes on the farm. The cherries are depulped right after the picking and fermented in plastic tubs for 36 hours. The coffee is washed until its free from mucilage and dried on a patio for six days.
