This lovely coffee was picked between last October and January. Farmers bring their red cherries to the washing station where the coffee is washed with water from a nearby river, after which it is pulped with an old Agard pulping-machine. The mucilage is removed by traditional fermentation, which lasts between 36-48 hours. After this, the coffee is dried on raised African beds for 10-12 days. We recommend letting the coffee cool down for 5-10 minutes before enjoying it, which makes it easier to find the different layers of flavour.
