This coffee comes from a 500-hectare farm that is located in a nature reserve in the Keffa region. Coffee is grown without using chemical pesticides and fertilizers. What makes this coffee particularly interesting is that many varieties and cultivars grown in the farm were released in the late 70s. In addition, to these new cultivars, they also grow Ethiopian wild coffee.
After picking, the coffee is depulped the same day, then fermented underwater for 36 hours. The anaerobic fermentation enhances the flavours of this coffee. It is washed in canals, then spends 16–18 hours in a soaking tank before being spread on drying tables. It takes Washed coffees between 7–11 days to dry.
