Espresso Paquito comes from an estate called San Juan Bosco in the Santa Ana region in El Salvador. The estate is owned by Jose Antonio Salaverria. San Juan Bosco is a part of a larger co-operative called Finca San Francisco. The climate and weather conditions in Santa Ana create ideal growing conditions for high quality coffee. The volcanic soil and cool climate ensure the slow ripening of the coffee berries.
Well trained coffee pickers know to only pick the ripe berries. The berries that end up being processed are still sorted by hand beforehand to ensure ridding the batch of over or underripe berries. This is how a high and even quality batch is ensured. Before washing, the pulp is removed mechanically. After this the coffee is fermented overnight before the actual washing starts. After this the coffee is laid out to dry for about 15 days. This particular lot is a blend of Catuai and Bourbon varieties.
