Ovidia Carcia planted the first coffee bushes on its farm back in 1987. The name La Nueva refers to the inspiration of new ideas and visions. A few years ago, she shifted her focus to honey and natural processing. This is a way of conserving already scarce water resources. The three-step process of this Red Catua variety includes crushing and separation of the berries, 72h dry fermentation in the sun and finally 15 days drying in the sun. The coffee has a soft and thick mouthfeel. The flavour is characterised by cocoa nibs, maple syrup and fine fruity acidity.
