The Timbio – Cauca -coffee is made up of coffee from 5 small producers from 8 Villages where they are harvesting between May and July. The farm sizes are quite small, from 1ha to 5ha. Popayan is the capital of the Cauca Department; the name comes from the indigenous Quecha people from the word “Pampayán” meaning ‘Valley of the River’. Timbio is the region just 15km south of Popayan where the altitude and fertile soils provide the perfect conditions for growing coffee. Through agronomy training and support from Banexport (the exporter) the farmers have learnt when the best time to select and pick the coffee at its ripest depending on the varietal. This coffee has notes of Christmas spices, like cardamom.
