A new taste made with a new approach. This coffee is from the ‘Santuario Sur’ farm project, started jointly by Luis from Carmo Coffee in Brazil and Camilo from Santuario Farm in Colombia. The coffee is fermented anaerobically for about 72 hours in tanks with the cherries as they are, using yeast cultured in-house from Geisha coffee juice. The cherries are then slow-dried under a blue roof to protect them from ultraviolet rays. The drying room is equipped with a black light to prevent bad bacteria from working. The roaster recommends enjoying a cup of coffee in a relaxed atmosphere as the taste changes with the temperature.
