Indonesia Mandheling Blue Lintong
Koto Coffee Roasters
Roaster: Masakuni Sakata
This dark roasted coffee has a moderate richness and bitterness, and an earthy aroma with a hint of tropical fruits and herbs. Mandheling is not the name of a specific coffee-producing region, but a general term for Arabica coffee produced in the northern part of Sumatra, and is a kind of brand name. Mandheling is produced in the vast area of North Sumatra. In the Blue Linton Refining Process, only raw materials from a limited number of collectors in the Linton-Nifta area are used. The pulp is peeled and washed at the production site and transported in wet parchment to the exporter’s factory in Medan (Ekanusa Jaya) in the early morning hours when the temperature is cooler. The raw material arrives at the exporter and is processed on the same day. Wet parchment is first dried in the sun for about 3 hours (depending on weather conditions). The parchment is then stripped using a threshing machine. The parchment is then stripped and dried in the green state using a flooring screen. The drying time is about 2-3 days. Once uniformly dried, the green beans are manually cleaned of defects according to even stricter specifications than the G1 level. The result is a clean taste with a strong sweetness.
