Washed Sidamo coffees undergo the washed processing method. This involves pulping the coffee cherries to remove the outer skin, fermenting them to break down the mucilage, washing them clean, and then drying them on raised African beds. The washed process often results in a cleaner cup with pronounced acidity and clarity of flavor. Sidamo coffees are known for their vibrant acidity, medium body, and complex flavor profile. They often feature floral aromas, citrusy notes such as lemon or bergamot, and a range of fruity flavors including berry, peach, and tropical fruits. The journey of this coffee project commenced in 1991 in the beautiful landscapes of Yirgacheffe, marking three decades of dedicated coffee cultivation within the family business. Founded by Mr. Bogale Mengistu, their legacy began with a commitment to excellence in coffee production, initially serving local markets and subsequently expanding to supply esteemed exporters.
