In the south-west of Honduras, on the border of El Salvador, lies its best-known coffee-growing region, the Montecillos Mountains. It has the ideal soil and climate for growing coffee. It is here that Marcala was awarded the first protected designation of origin for coffee. Coffee producers are made up of smallholder farmers and the coffee is grown ecologically, without the use of chemical pesticides or fertilisers. Marcala coffee is grown at very high altitude at low temperatures, so the coffee ripens slowly and the beans are very dense.
