Jose Omar Rodriguez founded the Capucas cooperative in 1999 and continues to run it. It was named after the nearby small town of La Capucas. The coffee is grown on the slopes of the highest peak in Honduras, Mount Celaque, under the shade of citrus trees and other trees. The coffee trees are pruned to a maximum height of 180 cm to make it easier to pick the berries by hand.
