Juan Saldarriaga is a young producer who took over his family’s farm in 2012 and started planting several different and new varieties. He has two pulpers with a capacity of 1600 kg of cherries per hour. He does traditional fermentation in tanks, often with intermediate rinsing. He has built several different types of drying rooms, changed the processing and started to run a few other farms in the area. He dries the wild berries in a specially designed mechanical “cold dryer”, as drying is the biggest challenge in these conditions due to humidity and temperature.
