This coffee is a complex blend of chocolate, cocoa and citrus notes. The smooth flavour profile combined with a silky mouthfeel and a lingering sweet aftertaste create a balanced experience. The coffee is processed within six hours of picking. The beans are fermented for 32 hours, after which they are thoroughly washed and sun-dried. The result is a clean and complex coffee. The coffee comes from Anabelly Morales’ coffee farm in the Huehuetenango coffee-growing area, which is renowned for the quality of its coffees. Anabelly is a passionate third-generation coffee farmer and has worked on the farm from a young age, learning all aspects of coffee farming. Anabelly inherited the 2.2-hectare El Mirador coffee farm from her parents and continues his parents’ 20+ years of work for quality coffee. The coffee bushes on the farm are sheltered by numerous citrus trees and the temperature of the area, between 10-28 degrees Celsius, ensures even ripening of the coffee beans. This creates ideal growing conditions for the coffee beans.
