Sumatra Mandheling

Vits Kaffee GmbH & Co.KG

Many islands in Indonesia are of volcanic origin. As a result, they are mountainous and have fertile soils, which is ideal for growing coffee. Sumatra is their second largest island. Mandheling coffee grows on the slopes of Mount Leuser in the Balak region. The region is in the province of Aceh in the northwest of the island. The coffee does not bear the name of the growing region, as is often the case, but is named after an indigenous tribe of Sumatra, the “Mandailing”. The coffee is prepared in a special process called “Giling Basah”. This is a traditional Indonesian process. It largely corresponds to the “pulped natural” preparation. However, the parchment skin is removed at about 50% residual moisture instead of the usual 10-12%. In this respect, this process is sometimes also called “wet hulled”. This gives the beans their dark green colour on the one hand and a unique aroma on the other. It is characterised by very little acidity, a full body, and spicy and chocolate notes, especially in the finish. The dark roast is Vits’ longest roast with 17 to 19 minutes of roasting time. They roast the coffee almost out, that is, close to the “second crack”. Thus, they emphasise above all body, sweetness and roasted aromas. The acidity is reduced to a minimum.
