Mokkapalat, ​​mockaruta, brownies – the traditional treat with a new twist

Mokkapalat or traditional mocca brownies, are a well-known dessert treat for everyone in Finland. This easy-to-bake, chocolatey pastry is a familiar sight at bake sales, events, and during any festive moments. These delicious brownies consist of a soft base, usually flavoured with cocoa powder and strong coffee, and a chocolate frosting on top, typically decorated with sprinkles.

SLURP has created its own version of the traditional recipe, where plain yogurt is used instead of eggs to make the batter extra fluffy!

Base

  • 1 dl sugar
  • 1 tsp vanilla sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ dl dark cocoa powder
  • 4 dl gluten-free light flour mix
  • 1 dl plain yogurt
  • 1 dl milk
  • 1 dl coffee
  • 150 g melted margarine

Frosting

  • 100 g dark chocolate
  • 25 g margarine
  • ½ dl strong coffee
  • 25 g cream cheese
  • ½ dl powdered sugar

Decoration

  • Sprinkles

The recipe can be made fully vegan or gluten-free by substituting the dairy products with equivalent oat or soy-based products. The gluten-free flour mix used is finely ground.

Instructions:

  1. Preheat the oven to 175°C (350°F).
  2. In a bowl, mix the dry ingredients together.
  3. Add the melted margarine, yogurt, milk, and coffee to the mixture. Stir well until smooth.
  4. Pour the batter into a small greased baking pan (e.g., a round pie pan with a diameter of about 22-25 cm).
  5. Bake in the middle of the oven for about 30 minutes or until a fork inserted into the center of the base comes out clean.
  6. Once the base has cooled slightly, prepare the frosting. Melt the margarine and dark chocolate in a pan or using a double boiler. Stir in the strong coffee, cream cheese, and powdered sugar. Mix until smooth with a whisk and spread over the base.
  7. For decoration, you can use sprinkles, melt white chocolate, or decorate with edible flowers—anything goes!

 

Tip! By replacing the cocoa powder with a chocolate flavoured protein powder you can add some kick to your recipe!
