Janson X Project, a coffee born out of a remarkable journey that began in 2018. It all started when Ben (from Manhattan) and Kai met at a trade show in Dubai, sparking a discussion about the fundamental aspects of coffee production: threshing and drying. This encounter not only formed a lasting friendship but also ignited a shared curiosity to unravel the mysteries behind exceptional coffee.

The focus initially turned to the drying process. What constitutes good drying? Why do existing systems with specified humidity and water activity parameters yield varying quality results? These questions propelled the Janson X Project, which aims to quantify the nuances in drying by employing custom-built dehydrators. The Janson X project is simply about trying to quantify these differences in custom-built dehydrators that can dry coffee quickly under cooler conditions than average harvest norms. 

In the pursuit of excellence, this particular lot undergoes a “hybrid washed” method. The coffee undergoes an extended fermentation period before being pulped, washed, and then carefully placed into the dyers. This meticulous approach enhances the flavour profile and ensures a truly exceptional cup of coffee.

The coffee plantations of Janson Coffee Estate thrive in the breathtaking Chiriqui highlands, nestled on the slopes of Tisingal and Baru volcanoes, which form part of the Talamanca mountain range. The unique climate and terroir at altitudes ranging from 1,350 to 1,700 metres above sea level contribute to the exceptional quality of the beans.

Janson Family takes great pride in micromanaging our farms in individual lots, allowing for traceability and stringent quality control. These lots are separated by lush forests, acting as natural barriers against pests while safeguarding the region’s precious flora and fauna.

Sustainability lies at the heart of the operations. To ensure a harmonious relationship with the natural environment, farms maintain a nutrient-rich soil without the use of harmful pesticides or herbicides. The commitment to sustainable practices extends to a nursery, where special-grade Arabica seeds for the  green tip Geisha, Catuai, Caturra, and Pacamara seedbeds are selected.

In 1993, Janson Family  constructed a state-of-the-art processing plant exclusively for specialty coffee, featuring various selections to segregate coffee based on quality and origin. Combining cutting-edge technology with artisanal methods, they employ both natural and wash processing techniques to achieve unparalleled excellence. Each premium coffee undergoes traditional drying preparation and meticulous hand selection.
