Ana Perez
Makea Coffee
Roaster: Kyle Papai
Mrs Ana Perez Rafael has been running her family’s hectare farm for years, producing 1200kg of coffee every year. We fell in love with Sweet Coffee Ana’s coffee for its growing area even for its exceptional juiciness and flavour profile. The beans are soaked with their mucilage layer in water for 36 hours, then washed and soaked for 12 more in clean spring water. This double soaking process gives the coffee a wonderful fermented sweetness. We committed to buying Ana’s coffee from the future harvest as well, paying 109% above the market price as a quality premium.
