This coffee comes from Luis Eduardo Campos’ La Ortiga coffee farm. The coffee is processed with a new natural thermal anaerobic fermentation. Luis discovered that the caramelisation of the coffee pulp in anaerobic fermentation tanks can be positively influenced by the addition of 80°C water. The heat improves the absorption of sweetness from the coffee fruit into the coffee bean, which is reflected in the cup as a complex taste sensation. Cupping-score: 87.5.
