The coffee beans are picked and dried in the sun and spread under spacious platforms to dry for four months in the monsoon winds. The coffee beans get big, yellow and low on acidity. The method mimics the effect of the monsoon winds that took place hundreds of years ago during the shipping of the coffee beans to Europe.

The Pirkanmaan Paahtimo’s Monsoon Malabar is typical: the taste is robust, strong and earthy. The mouthfeel is full with a short aftertaste.
