So, what’s good about brewing tea with cold water? It’s the mild and rich taste it produces. By using cold water from the beginning, the tannin and caffeine, that make the drink bitter, will hardly dissolve into the water. Theanine, an amino acid that creates a mild and rich flavor, is also accentuated. By letting the tea leaves sit into the cold water for many hours, the genuine taste of the tea leaves comes out more.
