Micaela Domingo is a second-generation coffee producer in the town of Concepción Huista in the Huehuetenango region. During the harvest, she makes sure that only the ripest cherries are picked after which they are depulped on the same day of picking. The coffee from Micaelas farm is fermented with water for 36 hours, then washed and laid on the patios to dry in the sun for five days.
