Purpuracae
To wrap up the crazy year that was 2021, we’ll bring you one more coffee from our new best friends at Manhattan Coffee Roasters in Rotterdam, Netherlands!
We’re extremely proud to be amongst the firsts to introduce the variety called Purpuracae from a farm in Tolima, Colombia called El Diluvio.
At farm El Diluvio, located in the slopes going to the Nevado del Ruiz, in the town of Herveo, where the mountains are almost touching the clouds (and sometimes they do), is the one of the most intriguing and exciting farmers we’ve heard in a while. With a huge collection of different varieties grouped in micro-lots ranging from 1000 to 3000 plants, this farm holds some varieties wider Specialty Coffee audience (and sometimes even seasoned professionals) have never heard of!
Don Ronald, who is in charge of El Diluvio, has been in coffee for his entire life and as he says, he has always been intrigued in the “why” behind the flavor differences between coffee varieties. This is how he began to involve different varieties to his farm, just to find how they differed from each other in the same environment and traditional wet processing.
In 2021, the crew of El Vergel met Ronald and after getting to know him they had such a good connection that they decided to make a process at El Vergel Estate’s facilities. They made first ever naturals with Don Ronald’s coffees and the results were outstanding – one of these results is on it’s way to your mailbox as we speak!
This Purpuracae is processed in the wet milling facility of El Vergel. First, the ripe cherries are fermented 96 hours with cooling water system going through the outside of the tank to help prolong the fermentation time. This phase was followed by semi-mechanical drying which consisted of drying in silos & raised beds.
Expect notes of purple grape, violet and guava.
